Pennsylvania Wacky Cake

CHARLESTON — The Miscellany features reader’s recipes to encourage families to cook and eat together.

Theresa Lubbers, a member of the Cathedral of St. John the Baptist, submitted this recipe for Pennsylvania Chocolate Wacky Cake, writing that it was one of the first recipes her mother taught her when she was a little girl.

“It was dad’s favorite so if it was the weekend, we had a Pennsylvania Chocolate Wacky Cake on the counter,” she wrote in an e-mail. “The great thing about this cake is that it is a one bowl and one wooden spoon type of cake,” she said. “Dad has been gone for many years, but mother still makes this cake when she is expecting visitors. Daughters included.”

Pennsylvania Chocolate Wacky Cake
3 cups flour
2 cups sugar
5 tablespoons cocoa
1 teaspoon salt
2 teaspoons baking soda
Place dry ingredients in a large bowl and stir. Then add:
3/4 cup Crisco oil
2 tablespoons vinegar
2 teaspoons vanilla
1 cup hot water
Stir well, then add:
1 cup cold water

Mix thoroughly and pour batter into an ungreased 13x9x2 pan. Bake at 350 degrees for 35-45 minutes or until toothpick inserted in the center comes out clean. The cake is very moist. Frost with your favorite icing.
